from:Duck hunting is an extremely exciting outdoor sport that has been popular for hundreds of years. • Two cups duck stock
• One chopped onion
• 1 ½ teaspoons salt
• 1 teaspoon pepper
• 1/8 teaspoon red pepper (optional)
• Other seasonings if you have some you prefer
Instructions
Place the wild duck in a 4-quart pot and cover with water. Add the onion, salt, pepper and other seasoning and bring this to a boil. Reduce heat and slow cook this for one and a half hours. Remove the duck and place it on a warm platter. Bring two cups of reserved stock to a boil. You can add water to make this amount if necessary. Add your minute rice to this boiling stock, cover, and let stand twenty minutes. Place the fluffed up rice around the duck and garnish with parsley. This makes three to four servings.
If you love writing poetry and are having a dinner party where you serve wild duck, write a duck hunting poem for each guest to read when they sit down. This will certainly add a little fun to your dinner party.
